Oak Barrels
We just received our brand new oak barrels all the way from Hungary! To prepare the barrels for aging our bold, full-bodied reds, we like to season the wood with a white wine. By starting with a white wine, our barrels are primed for aging reds and we get a delicious, oaked white out of the deal! Starting this month we have both white and red wines available for you to get your hands on. Take a look at the options below and let us know which barrel has your name on it!

Each month we will feature a new recipe for you to try at home and offer our suggestion on which of our wines to pair it with!
This month we’re going savory with this Pancetta and Egg Pasta. Italian pasta dishes are a easy to pair with wine. This is generally due to the fact that Italian food tends to have only three or so ingredients, and an easy, direct set of flavours to think about when you’re matching them with wine. This month’s dish is a great example of this – you have cheese, and egg, and a bit of Pancetta- so, essentially, a salty, savoury dish which needs a cutting, fresh and zingy wine to lift everything up and keep things exciting. We recommend our Italian Pinot Grigio from Italy.

Pancetta and Egg Pasta

INGREDIENTS:
1 lb (500 g) spaghetti noodles
2 tbsp (30 mL) olive oil
4 oz (125 g) pancetta, chopped (about 1 cup)
2 large cloves garlic, finely chopped
Fresh ground pepper and salt
1/2 cup (125 mL) chopped fresh parsley, basil or a mix of both
1/2 cup (125 mL) grated Parmesan cheese
4 lightly poached or fried eggs

METHOD:
Boil pasta in a large pot of well-salted boiling water until al-denté.
Measure out 1 cup (250 mL) of the pasta cooking water before draining.
Meanwhile, warm olive oil in a large skillet. Add pancetta and cook until browned.
Stir in garlic; cook for 2 minutes or until fragrant.
Add drained hot pasta to skillet along with reserved pasta water. Toss for 1 minute to coat.
Remove from the heat and toss in fresh herbs and Parmesan cheese.
Season with salt and pepper to taste.
Divide between serving bowls.
Top each serving with a poached egg.
TIP: For poached eggs: Bring a shallow pan of water with 1 tbsp (15 mL) white vinegar to a gentle simmer. Crack fresh eggs, individually, into a small bowl. Gently slide into the water. Simmer for 4 minutes. Remove with a slotted spoon to a paper towel-lined plate to blot dry. |
We know, we know! Its not even Thanksgiving yet! It’s all about 4, 6 and 8 weeks around here though so its not too early to start thinking about Christmas gifts of the liquid variety! Wine is a popular gift over the holidays and a great host(ess) gift. How much more meaningful would it be to gift a bottle of your very own wine with a great custom label and cap?! Four week wines started now will be ready to bottle at the start of November; this will give them time to age in the bottle before you need them in December for your stockings. Plus, because there are 30 bottles in each batch, that means you can strike 30 gifts or party favours off your list right now! (We suggest keeping one or two for yourself though!) |
